2-1/2 cups of almond flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon vanilla
1/4 cup coconut oil, melted
1/2 cup honey
3 large eggs
1 apple cut into chunks for cake mix
1 apple slice thinly for topping
1 tablespoon lemon juice
Blend all ingredients (except apples) together in food processor.
Fold in apples.
Pour mixture in lined cake tin and place sliced apples on top. Bake at 180 for 35 – 40 minutes.
Leave slice to cool before cutting, if you’re too eager it will crumble!!
