Banana Chocolate Chip Protein Cake

A few people have recently asked what would happen if they added protein powder to some of my recipes, I attempted to explain that because of the consistency – it would go dry and crumbly. Some learnt the hard way. Following that I decided to create something for all of the gym junkies out there that need their daily dose of protein! So here it is, Banana Chocolate Chip Protein Cake (can you feel your muscles getting bigger already?!)

INGREDIENTS

3 mashed bananas

1 cup of almond meal

½ cup of chocolate protein powder (I used Nuzest)

½ cup of coconut flour

2 tablespoons of almond milk

¼ cup of coconut oil (melted)

2 tablespoons of maple syrup

3 eggs

1 teaspoon of vanilla essence

½ teaspoon of salt

½ cup of cacao nibs or dark chocolate chips

DIRECTIONS

Preheat oven to 160 bake.

Combine ingredients in large bowl or food processor and mix well.

Pour combined mixture into a lined cake tin.

Bake for 45 – 50 minutes, or until top is golden brown.

Leave to cool and serve.
