Banana, Walnut and Parmesan Muffins

1 and 2/3 cup of almond meal

1/4 teaspoon of salt

2 teaspoons of baking powder

1/2 cup of walnuts

1/2 cup of parmesan cheese

100 grams of cooked sliced bacon

1 egg

1/4 cup of coconut oil (melted)

2/3 cup of unsweetened almond milk


Preheat oven to 180 bake and grease a 12 tray muffin tin. 

In a large bowl, mix dry ingredients.

In another bowl, whisk the coconut oil, egg and almond milk.

Combine the wet and dry ingredients and fold in the bacon pieces.

Divide mixture evenly into the prepared muffin tins.

Bake for 20 - 25 minutes or until golden brown.
