1 cup of raisins
1/2 cup of dried apricots (diced finely)
1/2 cup of dried pineapple (diced finely)
1/2 cup of cashew nuts
1/2 cup of walnuts
1/2 cup of sliced almonds and additional for garnishing
1 cup of almond flour
1/2 cup of coconut flour
2 teaspoons of baking powder
2 teaspoons of cinnamon
1 teaspoon of ginger
1/2 cup of coconut oil (melted)
1/3 cup of unsweetened coconut milk
Preheat oven to bake 160.
Soak all dried fruit in 1 cup of water on stove top on low heat until all water has been absorbed.
Mix all ingredients (except dried fruit) together in your food processor.
Fold dried fruit in to cake mixture.
Pour combined mixture in to lined cake tin and top with sliced almonds.
Bake for 50 minutes or until golden brown.
