Morning Glory Muffins

Today instead of snacking on my baby food sachet I decided to bake with it…and it totally worked!! Also saved the time of boiling and mashing sweet potatoes as I had originally planned on doing. Genius!
So here is a super easy recipe for morning glory muffins, exactly what you need on a Saturday morning to go with your cup of coffee.


1 sachet of Only Organic sweet potato and apple baby food

1/2 cup of shredded coconut

1/2 cup of raisins

1/2 cup of chopped dates

1/2 cup of walnuts

1/4 cup of honey or maple syrup

1/4 cup of pumpkin seeds

1/4 cup of sunflower seeds

1 cup of almond flour

1 large carrot grated

2 teaspoons of cinnamon

1 teaspoon of vanilla essence

1 teaspoon of baking powder

2 eggs


Mix dry ingredients first (you can do this in a bowl or in your food processor)

Add in eggs, baby food, carrot and honey - mixing again until well combined.

Spoon mixture into greased muffin tray. 

Bake at 170 degrees for 25-30 minutes.

Leave to cool before removing.

Makes 12 small muffins.
