Oat and Dark Chocolate Chip Muffins

So easy, so delicious and the dark chocolate chips almost make you think they’re bad for you.


1 and 1/2 cups of almond meal
1 and 1/2 cups of rolled oats
1 and 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup of coconut oil (melted)
1/3 cup of maple syrup 
2 eggs
1 teaspoon vanilla
1 cup of Greek yoghurt
1 cup of dark chocolate chips


Preheat oven to 180 bake and grease a 12 tray muffin tin. 

In a large bowl, mix almond flour, oats, baking powder, baking soda, salt and cinnamon.

In another bowl, whisk the coconut oil, maple syrup, eggs, vanilla and Greek yoghurt.

Combine the wet and dry ingredients and fold in the dark chocolate chips.

Divide mixture evenly into the prepared muffin tins.

Bake for 20 - 25 minutes or until golden brown.
