1/2 cup of full fat butter (I used Lewis Road Creamery)
1 and 1/2 cups of coconut sugar
1 teaspoon of pure vanilla essence
1/2 cup Smooth Pic's Peanut Butter
1 teaspoon of baking soda
1 and 1/2 cups of rolled oats
Pre-heat oven bake 160.
Melt the butter and whisk through coconut sugar.
Add egg and peanut butter, and whisk again.
Mix dry ingredients together in another bowl.
Combine dry and wet ingredients, stirring until combined (the mixture will be quite sticky).
Prepare a lined baking tray and roll mixture in to small balls, pressing down with a fork.
Put in the oven for 20-25 minutes, checking regularly (there's a fine line between them being cooked and burnt).
When cookies are brown remove from oven and leave for at least 15 minutes to harden.
