Primal Chocolate Coffee Cake

Dark chocolate and coffee are two of my favourite things, so why not combine them to make a delicious cake. A cake so delicious that I ate half of it in one day….still feeling slightly guilty for that. But I had to do the taste test before sharing with you, right?!

INGREDIENTS

2 and ½ cups of almond flour

1/3 cup cacao powder (opt for a good one, as this is where the flavour comes from)

1 teaspoon of baking powder

¼ teaspoon of salt

2 eggs

2 bananas

1/3 cup coconut oil (melted)

1/3 cup honey (melted)

2 tablespoons of greek yoghurt (make sure it’s not low fat)
1 espresso shot (I got mine from a café, but you could use instant)

Block of dark chocolate (at least 70%)

DIRECTIONS

Melt coconut oil and honey together on low heat.


Blend all ingredients together in food processor.


Pour mix in lined baked tin.


Break dark chocolate up and place on top of cake.


Bake at 180 for 30-40 minutes. 


Remove cake and pour espresso shot over, allowing flavour to soak through before serving
