Sweet Potato Chocolate Brownie

3/4 cup of boiled sweet potato

3 eggs

2 teaspoons of vanilla extract

1 teaspoon of cinnamon

1/3 cup of honey

1 tablespoon of baking powder

1/2 cup of cacao powder

2 tablespoons of coconut flour
2 tablespoons of wholemeal flour


Boil the sweet potato and let it cool. 

Mix all ingredients together and layer in a brownie pan. 

Bake for 20-25 minutes at 180 degrees and leave to cool become eating.

These are a great snack and freeze really well. 

I like to pop them in the oven and eat hot with a spoonful of cream or Greek yoghurt.
