Personally, I think that two of the best things about Christmas baking are dried fruit and fresh cream! Keeping that in mind I’ve created up this delicious Apricot and Vanilla Crumble Slice. It’s the perfect alternative to your traditional Christmas pudding and makes the house smell delicious. 

INGREDIENTS

1 cup of almond flour

1/2 cup of vanilla protein powder (I used NuZest)

2 tablespoons of coconut flour

1/4 teaspoon of salt

1/4 teaspoon of baking soda

3 eggs

1/4 cup of melted coconut oil

1/4 cup of maple syrup

1 teaspoon of vanilla essence

1 and 1/2 cups of chopped dried apricots

2 tablespoons of cream

DIRECTIONS

Put all ingredients together in your food processor or a large bowl. 

Mix until well combined.

Spread mixture evenly into a lined slice/baking tray.

Bake at 170 for 35-40 minutes.

Leave to cool for 10 minutes.

Slice and serve with fresh cream or Greek yoghurt.
