raspberry fejioa slice

This recipe has been adapted from Revive Kitchen’s Apricot Oat Slice. It is delicious, quick and easy. It also has no sugar or dairy – making it the ideal sweet treat.

2 cups of raspberries (fresh or frozen)
1 cup of fresh feijoas
3 cups of date puree (1 and ½ cup water and 1 and ½ cup dates blended)
½ cup of olive oil
1 cup of buckwheat flour
3 cups of rolled oats
1 cup of almond meal

Preheat oven to bake 180.

Heat raspberries and feijoas on low heat, stirring to combine.

Mix all ingredients (except raspberries and feijoas) together in a large bowl.

Line a baking tray – 200 by 300 will work best.

Press half of the mixture onto the baking tray.

Cover the base with the raspberry and feijoa mixture, pressing down firmly.

Sprinkle the second half of the mixture on top the fruit mix.

Bake for 30 minutes or until golden brown.

Leave to cool before cutting into slices.

Use other fruit fillings like apricots, apples or plums.
