Chia Seed Pudding

breakfast in a jar


1 can of full fat coconut milk
1/2 cup desiccated or shredded coconut
4 tablespoons of chia seeds 
2 tablespoons of raw honey
1 teaspoon of cinnamon 
1 teaspoon of pure vanilla extract


Mix all ingredients in a glass bowl/jar and leave in the fridge overnight. 

Add fresh fruit in the morning. 

Makes 4 servings.
