Nutty Raspberry Cluster Muesli

INGREDIENTS

2 tablespoons of coconut oil
2 tablespoons of honey
1 teaspoon of pure vanilla essence
1 tablespoon of chia seeds 
½ cup of almond meal 
½ cup of slivered almonds
½ cup of cashew nuts
½ cup of walnuts
¼ cup of brazil nuts (broken into pieces)
¼ cup of shredded coconut
¼ cup of freeze dried raspberries (you can get these at most health shops)

DIRECTIONS

Preheat oven to bake 180.

Melt coconut oil, honey and vanilla essence on low heat on your stove top. 

Stir in almond meal, creating a sticky like paste - this is going to help make clusters.

Take off stove top and mix in chia seeds, almonds, cashews, walnuts, brazil nuts and shredded coconut. 

Spread mixture out onto a lined baking tray. Clump bits together to ensure clusters are formed. 

Bake at 180 for 15 minutes. 

Toss mixture every 5 minutes. 

Leave to cool for at least 30 minutes. 

Stir through freeze dried raspberries. 

Serve with fresh fruit and yoghurt.
