Fruit and Nut Chocolate

Today when we went to the supermarket to purchase Easter eggs they were all gone!! We couldn’t believe it! On the plus side, it makes it very easy to resist the temptation to indulge! I decided to do a variation on raw chocolate fudge, by adding dried fruit - apricots and cranberries and nuts - almonds and hazelnuts. A scrumptious Easter treat.  

INGREDIENTS

1 cup of coconut oil

1/2 cup of honey

1 cup of cacao powder (cocoa works too) 

A pinch of salt

1 cup of mixed nuts

1 cup of dried fruit

DIRECTIONS

Melt the coconut oil and honey together on low heat, stir in the cacao and salt. 

Whisk until smooth, put in a baking tray with baking paper and freeze for 1-2 hours to set. 

Sprinkle fruit and nut over mixture.
