Clean Nachos

This is a special feature recipe from my lovely boyfriend Ben, who is currently doing the Whole30. Due to some of my health conditions I was unable to participate! But it hasn’t stopped me enjoying the delicious creations he’s been preparing in the kitchen. Take it away Ben…

Who loves nachos? My childhood favourite! Messy and delicious. You can now have nachos without all the guilt of eating half a bag of corn chips, and all that sour cream! Kumara chips, mince cooked with a can of tomatoes, tomato paste, and few spices. Topped with homemade guacamole, is all you need for a delicious and nutritious dinner. Eating healthy doesn’t have to be boring!



As much Kumara as you want (orange, purple or gold are all fine to use)

Olive Oil

Mixed Herbs


With a potato peeler, peel Kumara width ways (not the length of the kumara, but the face of it) into ‘chips’. 

When you have the desired amount, place in a bowl and drizzle lightly with Olive Oil and add in mixed herbs. 

Place on an oven tray lined with baking paper, and grill until crispy at 150-180 degrees. Cook until golden and crispy. 
*You want the chips to be in the oven long enough to lose the moisture and crisp up. There is a fine line between under cooked and soft, perfect, and burnt. So keep a close eye on the chips.

While the chips are cooking, prep the remainder of the meal; Nacho Mince and Guacamole…



500g Prime Beef Mince (any mince will work including chicken or pork)

400g Can Tomatoes

1 TBSP Tomato Paste

1 Tsp Ground Coriander

1 Tsp Paprika

1 Tsp Cumin

1 Onion

2 Cloves Garlic, Crushed

1 Chilli (if you want some spice)

TBSP Olive Oil or Coconut Oil (for cooking)


In a large pan, add oil of choice and brown mince, but don’t cook through. Add in all remaining ingredients and simmer on a low-medium heat until mince is cooked.



1-2 ripe Avocados (depending on size) 

2 TBSP Lime Juice
Salt and Pepper


Combine all ingredients in a food processor and blend until thick and creamy. 
*You can add other spices to give extra flavour. Diced spring onion is also nice with this.
