Creamy Coconut Rice

I was recently told by my nutritionist that I should add more brown rice to my diet. Although I do not usually eat grains, brown rice is full of calcium, iron, magnesium, potassium, zinc, fibre and magnesium. Eating it should help aid my digestion troubles. Because brown rice is so boring by itself - I’ve vamped it up and made a delicious creamy coconut combination. 

Serves 5 people.


1 and 1/2 cups of brown rice

3 cups of water

1 can of coconut milk (400ml)

1 egg

2 tablespoons of honey

1/2 teaspoon of salt

1/2 cup of raisins

1/2 teaspoon of cinnamon


I used my rice cooker to make this - it made life so easy and was just a matter of pouring things in and keeping an eye on it. 

Put brown rice and water in your rice cooker and turn it to cook. 

After 20 minutes stir in the coconut milk, egg, honey and salt. 

Leave to cook, be sure to check and stir every 10/15 minutes until it has cooked. 

Once cooked leave to cool for 10 minutes, then add in raisins and cinnamon. 

Serve with veges and meat or eat as is.
