Creamy Kumara Soup

creamy kumara soup

Kumara makes an unbelievably smooth satisfying soup. 

For four servings…


1 teaspoon curry powder

75g butter

2 cloves of garlic

5-6 purple kumara

1/4 cup of cream

2 cups of boiling water


Add the crushed garlic and curry powder to the butter in a large saucepan. 

Peel the kumara and slice into thick pieces.  

Cook in the butter for 1-2 minutes without browning. 

Add the water and cover and cook for 10 minutes until tender. 

Puree in food processor, add the cream and reheat (do not boil).
